We Be Clammin

Summer is in full swing! The hubz and I have been happily consumed by beach time, weddings and plenty of good friend time. And of course an abundant amount of food! Between beach bbqs, docking and dining at restaurants on the Long Island sound and a week in Gloucester, MA celebrating two of our very best friends wedding, I have had plenty of time to eat...not so much time to write about it!
One thing that I have been so excited to share is that I'm a clammer now! 

Yes, a clammer! The hubz got me a clamming rake for my birthday at the end of June!
That means pretty soon I am going to be bringing the Search for YUM INTO the water!!!
Living on the Long Island Sound gives us plenty of places to shellfish, but we still need to pick which location we are going to get a license for. Different spots will have their own licensing so if you are thinking about clamming make sure to know the town rules and designated areas.
Since you are allowed to get clams, oysters and mussels with the license, I have been busy looking up yummy recipes for all three. (You can get conch and scallop). I want to be prepared for our first hauls dinner!
Here are my favorites recipes that I have found for clams and oysters so far: 

Clam Recipe

Clams Italiano*

1/2 cup butter
5 cloves garlic, minced
2 cups dry white wine
1 tablespoon dried oregano
1 tablespoon dried parsley
1 tspon crushed red pepper flakes
a dash of onion salt
36 clams in a shell, scrubbed (that's a lot of clamming!)
 Melt butter in a large skillet over medium heat. Cook garlic in butter briefly. Stir in wine and season. Add clams into wine mixture, cover and steam until the clams open. Discard any that do not open! Serve in soup bowls with plenty of broth and bread (or crostini!) for dipping!

Oyster Recipe

Tequila-Oyster Shooters* over 21!

8 oysters
4 tsps good quality hot thick salsa
horseradish* optional
Tequila of choice
8 lime wedges
1 oyster per shot glass. Top each oyster with 1/2 tsp salsa. Fill each shot glass to the brim with tequila. SHOTS! and follow up with a lime wedge!
